Generous yet refined, it’s a fantastic partner for food—but just as delightful to savour entirely on its own.\u003c\/p\u003e\n\u003cp\u003e\u003cb\u003eHow was it made\u003c\/b\u003e\u003c\/p\u003e\n\u003cp\u003eThis wine was crafted in two separate fermentations, each made from destemmed grapes placed into stainless steel tanks. A portion of juice was drawn off using the \u003ci\u003esaignée\u003c\/i\u003e technique, concentrating flavour and intensity. One batch fermented with wild yeasts, the other with a selected strain - an intentional contrast that builds layered complexity. Fermentation ran warm, between 28–30°C, and the wine stayed on its skins longer than usual to enhance depth and richness.
