On the palate a bright, crisp acidity that brings vibrancy with texture and a long mineral finish.\u003c\/p\u003e\n\u003cp\u003e\u003cb\u003eHow it was made\u003c\/b\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp\u003eWe wanted to make this wine into a white wine but we failed. A teeny tiny but of the colour from the skins has remained. The grapes were whole bunch pressed and fermented in stainless steel. This separated the clear juice from the dark skins of the Pinot Noir grapes. The wine underwent malolactic fermentation after alcoholic fermentation was complete, converting the sharper malic acid to a smoother, creamier lactic acid.
