This wine underwent two years on fine lees to increase complexity and mouthfeel before a secondary ferment in pressurised stainless steel tanks.\u003cspan class=\"Apple-converted-space\"\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eWe added 6g\/L dosage (sugar) at bottling stage which is very low by comparison to most sparkling wines.\u003cspan class=\"Apple-converted-space\"\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eMade from Chardonnay, Pinot Noir, Cabernet Sauvignon grapes (a Renegade twist) grown in Essex, UK.\u003c\/p\u003e\n\u003cp\u003e\u003cb\u003eOur collaboration with Tower Hill Stables Animal Sanctuary\u003c\/b\u003e\u003c\/p\u003e\n\u003cp\u003eWhen describing the desired colour of our new wine, we said \"You know, pale pink, like a pig's nose.\" Not long after one pink nose became the focus of the winemaking process and like all those featured on our bottles, we wanted to find out more about the pig behind the nose (and eyes).\u003cspan class=\"Apple-converted-space\"\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eBridget is from the \u003ca href=\"https:\/\/www.towerhillstables.org\/\"\u003e\u003cspan\u003eTower Hill Stables Animal Sanctuary\u003c\/span\u003e\u003c\/a\u003e, a phenomenal project that really shows how a few people can do incredible work for hundreds of animals that happen to be a few miles away from where the grapes were grown in Crouch Valley in Essex. \u003cspan class=\"Apple-converted-space\"\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThe Sanctuary’s carers Martin and Fiona had one important question for us - \"Will the Bridget wine be vegan?\". The secondary fermentation happens in the bottle in the same fashion as Champagne, but rather than disgorging and removing the sediment you let it sit at the bottom. This increases depth, ageing potential and protects the wine so no suphur additions are needed.\u003cspan class=\"Apple-converted-space\"\u003e \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003eThese grapes were destemmed by hand over wire and fermented with skins in the tank, just like any red wine would. The base wine was dry hopped with hop flowers (Sabro, Citra, Mosaic) in large tea bags for 1 week before being removed. The wine then tank aged for months before additional yeast and sugar was added before undergoing secondary fermentation in bottle.\u003c\/p\u003e\n\u003cp\u003eAfter another year it was gently turned on its head so that the sediment from the secondary fermentation would form in the neck before being disgorged (the sediment frozen and popped out) and topped up with the same wine.
