On the palate a bright, crisp acidity that brings vibrancy with texture and a long mineral finish.\u003c\/p\u003e\n\u003cp\u003e\u003cb\u003eHow it was made\u003c\/b\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp\u003eWe wanted to make this wine into a white wine but we failed. A teeny tiny but of the colour from the skins has remained. The grapes were whole bunch pressed and fermented in stainless steel. This separated the clear juice from the dark skins of the Pinot Noir grapes. The wine underwent malolactic fermentation after alcoholic fermentation was complete, converting the sharper malic acid to a smoother, creamier lactic acid. Cabernet Sauvignon is almost never grown in the UK because it rarely ripens enough for still wine, but with careful vine management and protection under cover, it’s just possible to get the fruit where it needs to be.\u003c\/p\u003e\n\u003cp\u003eWe hand-harvested the grapes and brought them straight to London, aiming to make a white Cab Sav. But once we whole-bunch pressed them, the juice carried more colour than expected. Rather than filter it to force a white wine, we kept it natural—if it’s pink, it’s pink.
